I've had a look at the website

and read the technical paper

It's a very poor paper. The perfectly valid comparisons of different
Ethernet cables and their compliance with Cat5 or Cat6 specs show that
these cables might differ in the efficiency of data transmission, have
possibly slightly different throughput but that's nothing to do with
audio. One of the beauties of Ethernet is it's media independent. It
can run on copper wires or optical fibers. Even wireless WiFi is
similar to Ethernet. In all cases, the purpose is to transfer data from
A to B without a loss. If it's audio data, it doesn't matter if it's
converted into sound at A or B, the result is the same, if the same
conversion is applied and the data is available. One can only wonder
why they even bothered to reference a technical paper dealing with
irrelevant measurements.
All recommendations for the Meicord cables on the website are based on
purely subjective impressions of people who can hear grass grow.
