Wow you're asking for quite a lot.

Let's start with your existing equipment:

There is really no need to have a CD player, blu-ray player and SB
Touch in the system unless the CD player is being used to play SACDs.
If not then one can the blu-ray player to play the occasional CD. I'm
assuming that all your CDs will be ripped to a computer drive and
played back using the SB Touch.

Using a turntable will mean that a phono preamp will be required since
most modern preamps, processors and home theater receivers do not have
built in phono sections. (See below)

The Definitive Technology tower speakers can be used as front channel
left and right speakers.

Now let's make some assumptions about how you are planning on using the
system. For what I can gather from your post you would like to have one
system which will play music and also act as a home theater system.
While these two tasks can both be done by a single system a
multichannel home theater system does have different requirements then
a two channel stereo music system.

A home theater system will require a multichannel processor and power
amp or a home theater receiver. The system will also need additional
speakers - a good center channel speaker, a subwoofer (usually a
powered subwoofer) plus left and right rear channel speakers.

Okay so here's what you will need in order to flesh out your system:

A decent home theater receiver or a processor and multichannel power
amp.

A phono preamp

A good center channel speaker which will match your existing tower
speakers.

A pair of speakers to be used for the rear channel.

Cables and wire.

Your $2,500 budget I would divide as follows:

Home theater receiver - $1,000 to $1,500

Center channel speaker - $200 to $500

Rear channel speakers - $200 to $500

Phono preamp - $200 to $500

Cable and wires - $100 to $200

One additional item to consider is a good programmable universal remote
to help keep your sanity.
