What is ludicrous is that 16/44 (much less PCM in general) is far from the main problem these days. The problem is modern recording practises like close mic, multi-mic, dynamic compression etc.
Recording music in a more live, natural way requires so much more time and money. Modern processing is there because it saves time and money and it gives results the mainstream is satisfied with.
