If you are genuinely curious, then the short answer is that the mastering engineer is what matters. If you enjoy some Sony Legacy back catalog of reissues mastered by Vic Anesini, for example, then you will likely be pleased with his other projects. That said, the more capable your gear and expectations are, the more likely that you'll enjoy better mastering work. I'd recommend signing up to the Steve Hoffman forum and sort of search around for threads discussing sound quality of albums which most interest you. I know a little bit about jazz and rock mastering quality, so I can try to point you in the right direction.
