At Adelaide Uni Gliding Club many years ago (late 1980's early 1990's), we had
a guy called Matthew Nicholls.

He had lost both his arms (above the elbows) as a result of a childhood
accident and had prosthetic arms.

He went solo in the ES59 Arrow. He had a special attachment for his right arm
so he could use the stick and there was an extension for the airbrake lever
that he could operate with his left "hand".

However he found downhill skiing more exiting and left gliding after a few
years.

Not sure what he is doing now.
