I had a chat with a waitress in California last time I was there. She

how much someone in her job would be earning. I thought about
the kind of establishment I was in and the time of night, and guessed
it'd be about $30 per hour. She said she was on $7.20.

According to this : www.business-sa.com/.../Hospitality%20Industry%20General%20Award%202010.pdf -

A "food and beverage attendant" which I guess means waiter or waitress gets from $14.75 to $15.89 per hour plus 25% loading for casuals.

You can get more for more than 38 hours per week.

I didn't read the whole thing so there may be circumstances under which you can get a higher hourly rate.
