The Go-Pro Hero HD is the go. We stuck one onto the tip of a glider with the supplied taped attachments and it didn't fall off (Don't expect to get the tape off too easily!). I don't have any vid uploaded to the net but the quality is amazing.

Could probably be mounted on top of your instrument panel, which I suspect is somewhat more legal than taping it to your wing.
