Alan, Horses for courses of course but I would never be bothered with an old pnuematic vario when the modern electric ones like the B40 B400 B700 are just so good and with COMPLETE Function . Regards Instrument panel layout becausue I have spent 23,000 hours now looking at a "standard IFR " panel I simply would adapt this to have the ASI on the top left and the varios adjacent to the ASI,( at least one in the middle top), for easy scanning when thermalling, Altimeter to the right and as you say the map device lower centre. I have not flown enough with these pna/pda devices to be sure that i prefer one orientation or the other but initially i think I lean towards landscape.
I have not had a flask or a pneumatic vario in any of my gliders for more than twenty five years-more to the point I have never ever ever had a need to use a backup vario because of instrument or electrics failure. DO it right in the first place. If i was reduced to flying club gliders i think i would arrange a stand alone B400 that i just plugged in to the pneumatics for the day.
