Their aircraft were control configured vehicles, not stability
configured. They expected pilots to *fly* like birds do. With the
majority of aircraft the aircraft is stability configured, leading to
aviation's dirty little secret - aircraft fly themselves mostly and
pilots don't do much.
Not until the F16 did large numbers of control configured aircraft
get built. Then the electronics was used to make the aircraft easily
controllable by human pilots. To the pilot it looks and feels like a
stable aircraft but it isn't. Means you can build a smaller
horizontal stabiliser with attendant savings in weight and drag
and/or get a larger C of G range.

The Wrights certainly understood the need for banking and coordinated
turns which for some reason the French had not but the French cottoned
on very fast and left the Wrights in the dust, or rather in the
courts.
Interestingly, by 1910 or thereabouts, almost all aviation fatalities
were in Wright aircraft, including most of their exhibition team.
