As far as I can tell, the rebranding is mostly two things:
(1) The appearance of the Welcome screen will change (icons, colours,
Oracle logo). If we have any pix of this screen in the user guides, they
would be in Chapter 1 of the books.
(2) The colour of the seagulls, and some minor aspects of their
appearance, will change. This affects the cover design in our template
and all the existing chapters and books, but AFAIK does not affect
anything in the contents.
(3) "Sun" is replaced by "Oracle" in most, but possibly not all,
instances. I think the only place we mention "Sun" is in Chapter 1 and
one of the Appendixes of Getting Started... with one exception: some of
the extensions are named "Sun [something]" -- any that we mention in the
chapters on customising would need to be checked against the extension
listing to see if the name of the extension has in fact changed.

Here are the links (provided by Andy Brown) to more info:

http://www.openoffice.org/trademark/brandrefresh.html Shows the new
logo.

http://www.patentpending.co.nz/soapbox/?p=3 Shows the Install screen,
Start Center and the About screen.

http://www.patentpending.co.nz/soapbox/?p=52 Shows the Setup,
Application and File icons.

You could also check on the Marketing wiki to see if there is any more
(later) information.
