How do I start a new line?
For regular text, just hit enter twice and it'll start a new paragraph.
If you want a new line but keeping within the same paragraph, you can
use <br>
How do I create bulleted lists?
Bullet lists are lines prefixed with a *
Numbered lists are lines prefixed with a #
You can combine these and nest them, so to get something like:
1. text
2. text
* bullet
* bullet
you would use:
# text
# text
#* bullet
#* bullet
and has the bulleted lists option in the toolbar.

Of course there is :-) Click Help on the left menu, and then
Help:Editing. This will take you here:
http://wiki.services.openoffice.org/wiki/Help:Editing
which has links to various editing instructions and resources.
Alternatively you can enable the WYSIWYG editor. The instructions for
enabling it in your options are here:
http://wiki.services.openoffice.org/wiki/Help:FCKeditor
and you'll have a full WYSIWYG editor with handy buttons for most Wiki
edit functions. This isn't a perfect solution, but it covers the vast
majority of what you want to do.
