How long is your cable? I wonder if your parallel port might be a little weak? Do you have MISO, MOSI, and/or SCK connected to anything else other than directly to the chip? Sometimes something else in the circuit can load those lines down enough so that the programmer cannot take control of the lines during programming. The STK500 is fairly strong in this regard, so you might be able to program successfully with the STK500 but not with a weaker programmer like the parallel port + series resistors.
