Only to make this thread clearer,

Despite this thread is called "Converting from UTF-8 to ISO-8859-I with Axis2 and Java" I already can convert from utf-8 to ISO when I send the bytes to my soap server since I set Davanum's magic option:
options.setProperty("CHARACTER_SET_ENCODING", "ISO-8859-1");

What is not working now is getting the iso-8859-1 enconded strings sent by the SOAP server and converting them back to UTF-8 on the SOAP client.
