For those who want PDF from XML, and have TeX expertise, it is easy to turn the PassiveTeX module for AxKit into a LaTeX module. Then you can write XSLT to turn XML into high-level LaTeX and run pdflatex on it. I did this a few weeks ago for a very specialised task (printing daily posters listing events), and it worked well.
