Fawnie, All Azores records (and probably all Catholic records) were written in a certain format that was dictated by the Diocese (which probably came down from the Vatican). You may not have been on the list when I ran my mini lessons on reading the records and what they contained over the various time periods. If you go to the group archives and search for "reading portuguese records" you'll see my lessons that ran in early May. Here's a URL of that search of the archive: http://goo.gl/mmLkm
Also, if you go out to the Azores GenWeb, you can find my guide to researching and reading the records. Since you are interested in what the records contain, you'll want Part 3: http://goo.gl/AN6yu You may also want to bookmark the main Azores GenWeb site: http://goo.gl/e64KB I'd send the letter in Portuguese. I've mentioned before that there's a fill in the blank form that I've provided the URL for in past threads. Many people have used that fill in the blank form and have received responses.
