I'm sure you are right about the reason to include the grandparents in baptisms. Just too many similar names being used. And they were helping themselves, the priests, to find the right people to make the right certidaos later on in the lives of their parishioners. Just as they sometimes created indices.
In contrast, my grandmother was born in Hungary in the 1890s and in that parish, Lutheran, they didn't list the names of the parents for the couple when married. They had their own reasons, too. And it isn't as difficult to trace families as one might think, because they do list their age and where born, plus surnames were taken from the father, so you always know who you are looking for.
About Leal, it's also well used on Sao Jorge and a bunch of those from Pico have their Leal origins from Sao Jorge. I have lots of Leal ancestors from Pico, many different branches, so maybe that is how we link.
In Flamengos, there is a Silveira Leal family that I need to trace more. I don't know if that is your line, but I speculate that they came from Pico in the 1700s and link to me about the middle 1600s. That line is very difficult to trace due to a missing marriage record in Pico. It's about 300 years before we were born, but that is common with the 4th and 5th cousin estimated matches for Family Finder. And I think that's how we are estimated to match, but I'm not looking at it now.
