Jean,

Although there are 3 testing companies for genealogy as Eric mentioned,
23andMe really focuses on health. Ancestry has a lot of commercials (and
sells your DNA to big pharmaceutical for $750). The last one, Family Tree
DNA is where the Azores project is housed. They don't sell your DNA to a
third party, they aren't focused on health either. And they are having a
sale until December 31st: https://goo.gl/qr9d4u

Their autosomal DNA test is called Family Finder. It's on sale for $59
(+$12.95 S&H).

However, DNA won't give you the name of Jose Dias' parents or the name of
the ship he worked on. It will tell you who else you share DNA with, a
range, their trees (if they uploaded it), a Chromosome Browser, and your
ethnic and ancient origins.

The records of the Azores are online. Even though you know Flores, you can
probably find a Jose Dias born in 1833 in many villages:
tombo.pt/en (stay in the left column and navigate to Flores).

Ribeira das Tainhas, Achada
