I do *exactly* the same with a number of Domino servers. I'm using even
slower backup hardware: VIA EPIA MII 1GHz with 512MB RAM. The biggest
server is about 50GB of mail databases that get backed up nightly via
rsyncd with minimal problems.

The biggest problem is that keeping a series of incrementals and fulls
consumes *tons* of disk space, but short of using transaction logging,
*any* form of backup is going to suffer from this. I truly love the
convenience of having a series of NSF's that I can simply open if I need
to, so I'll waste the space, rather than deal with transaction logging...

Oddly enough, my biggest problem is over the weekends, where the *lack* of
a blackout period tends to get things out of whack. I'm actually tempted
to extend the blackout periods over the weekend, just to keep things in
lockstep.
