I just back up files in the Documents and Settings directory, and if the whole machine croaks, I either reinstall from original media, or from images made with partimage.

For smb, I added the backuppc user as a windows user that is also in the existing Backup Operators group. For the share, I then add to the Share Permissions (the Permissions button on the Sharing tab of the share properties) the Backup Operators group. Also, under the "properties" of a directory that is denying access, look at the Security tab for the directory and add the Backup Operators group.
