I have a similar situation with a file server that is my main photo archive - about 800GB of files most of which never change and 2-5GB added after each shoot I do. I eventually settled on a full backup every 30 days and keeping 30 incremental backups and 6 full backups. The full backups take about 36 hours to run (mostly because the ReadyNAS is not very fast) - I can backup similar sized files much faster from my Mac Pro.
