Hopefully this is a simple fix - I'd like to know if its possible to change the location where the backups are stored. If so, how do I go about doing this? We'll be installing a 500GB Software RAID-1 for the backups, so telling BackupPC to store the backups here is a must.

Please search the list archives, this has been answered a lot in the past. You can use a symlink, a bind mount or reinstall BackupPC and specify the location at install time (if you're using the source .tar.gz and not some distro-specific package).
