Actually, those are the Ubuntu paths (which works best, as we've heard ;-),
not the BackupPC standard paths, which would be
/data/BackupPC for __TOPDIR__ and
/etc/BackupPC for __CONFDIR__.
Your installation may use different paths, in which case you need to use
those.
I believe you've missed the host configuration files. In fact, which part of
__CONFDIR__ would you *not* want to copy? I don't know about Ubuntu, but the
Debian package keeps htpasswd and htgroup for access to the web server there
too. Thinking about the web server, you also want to copy its BackupPC-related
configuration, which may be part of a larger file or a single included file,
depending on your web server and distribution.
As a further remark, if __TOPDIR__ and __CONFDIR__ differ between the two
servers, you'll need to edit the configuration files to reflect the changes
rather than simply copy them over.

I'm a bit confused that you seem to want to turn off your newly installed
server and continue to use the first one. Did I understand that correctly?
What are you trying to do?
- Switch to a new server?
- Set up a backup (i.e. spare) server?
- Set up a redundant server (i.e. do two independent sets of backups)?
- Archive/freeze the current state of your server?

I don't really understand what you mean by "au niveau graphique".
Considering you are asking a question with a rather obvious answer (and
including recipients that only first-time mailing list users would ever
consider including), I'll add that you might need to change other things
outside the BackupPC server(s) (depending on what you are actually trying
to do), including for example
- firewall configuration or
- "from=" restrictions in ssh authorized_keys files on the clients.
