If you are running over ssh it is the same path as you'd use from the shell 
(i.e. / for everything).  I like to add --one-file-system to the rsync args and 
then include every mount point that I want to back up in the share list.  This 
avoids walking into nfs mounts or accidentally mounted dvd's etc., but you have 
to be careful to include everything you actually want.
