In the web interface, select the host you want to change and then go to
"Edit Config" (the one in the host menu at the top, NOT in the server
menu). There, you can change everything (including schedules and backup
targets) for that host.
Of course you can also change the hosts config files directly (that's
actually what the web interface does, too)
