We use Raspbian, or Raspberry Pi OS as they've decided to call it now.
It's based on Debian, with the same packaging tools.  You can grab a
bootable image or you can be creative.  You can boot with a filesystem
image on a micro SD card (including read-only if need be), boot with a
USB filesystem, boot with an NFS filesystem, boot as a USB 'gadget'.
We do all the above for our applications.

Once you have a system that boots you can do pretty much all the APT
things that you can do with Debian.  I personally never really think
about it not being Debian although people here who get into the guts
sometimes do things with the firmware that make my toes curl.

Some Pis have restrictions on how you can boot them that others don't.
Generally the newer ones provide more flexibility.

The thing I like most about them is that they don't need cooling fans.
