is a great idea !!! :-D remember that you can convert the VM image from one system to ohter (vmware -> xen or xen -> virtualbox or etc). the only problem is the drivers and agents, for example... to get the best peformance in xenserver, you need install the xen agent (xentools). !! in this case...
