Does anyone have working config files that I could use as a starting point?

if you want to set up bacula yourself you will have to understand the manual, and you will probably need the usual trial-and-error phase.

If this is not an option for you, you should consider finding a consultant doing the work for you.

Bacula is a little too complex for a ten-step guide to successfully backing up a network, the configuration needs to be tailored to your needs, and, after all, if you don't understand your setup your backup is worthless because you will probably not be able to restore in case of an emergency.

Is there an easy how-to guide for Bacula? I'm looking for a real
simple set of instructions how to setup Bacula to do multiple
clients to a dedicated server using disks as the backup media.

Note: I have gone through the documentation, and do not have time to
do trial and error till I get it right. That's why I'm looking for
    an "easy guide"
