Don't reuse the client definition. Just set-up a new client definition for the new server so that both are contactable by the console. Be sure that the passwords match from the fd config to the dir config. Once you can do an estimate on the new server type the restore command. Select the old client and then after you selected the files and before you select yes to run the job. Hit the modify key and change the client to the new server. Run the job and the files will be restored to the new machine. I do this all the time, in fact I just recovered a machine by restoring the fd config to a different machine, then job Bacula up and running and then restored all the files back to the machine.
