Ok, so I guess I didn't read the manual properly... I see that for a copy
job we can specify the pool it goes to using the "Next Pool" parameter.
But the documentation seems to assume only one copy may be made... Is it
possible to run multiple copy jobs (with different values for "Next Pool")?

I would use the Selection Type="Select all uncopied jobs", because we are
making our backup copies at the time of archiving our data.
How would it know things like: copy B has been made but copy C has not yet
been made... My assumption is that no Copy C jobs would ever be made
using this Selection Type, because everything would already have a copy. So
what should we do - use a custom SQL Query perhaps?

Kind Regards
Swami
