On any Mac, you can do this in *any* application that accepts text input so long as the font you are using is a complete one. All fonts rcvd with w/ your Mac should be complete, but some demoware and shareware fonts are not. Type <option> e and then either the a or i. For a capital, just use <shift> w/ the a or i. [Note that it doesn't look very good in Palatino because the lines are so closely spaced. This key sequence puts an accent over any vowell.
