GTK_UPDATE_ICON_CACHE = /usr/bin/gtk-update-icon-cache
HICOLOR_ICON_DIR = /usr/share/icons/hicolor

Which is not prefixed...

icons are still installed in HICOLOR_ICON_DIR=`$PKG_CONFIG --variable=prefix gtk+-2.0`/share/icons/hicolor/48x48/mimetypes, though, so they are available for other applications, too.

Ok, so I edit that by hand before doing make install...
