If time is your only concern than this appears to be the best choice. However, generally you go to Bilevel because you want the space savings it entails (roughly 8x smaller).
If you encode to grey you may be able to reduce your rendering resolution by at a factor of 2 (or perhaps 3) without significant loss of fidelity, which would help with the size issue.
There are lots of tradoffs to consider, without intimately knowing your target audience I can't say what the best thing is.
