As you noticed, setting it to 'message doesn't respect some of Gnus'
internal processing (e.g. Gcc:-header, Posting Styles).
Kai's suggestion finally got implemented some weeks ago (noticed that
is was documented but not implemented...), you'll have to fetch a
recent CVS version or snapshot from CVS
(http://www.waider.ie/hacks/emacs/bbdb/bbdb-2.2.tar.gz), I guess.
Then say:
(setq bbdb-send-mail-style 'compose-mail)
