If there were a hook run right before editing a notes field, I'd use
it to set-fill-column and turn on auto-fill-mode.
Lacking that, I type M-q (fill-paragraph) right before committing the
data into the notes field. Unfortunately, the default setting of
fill-column is too big, given the indentation of fields, so I have to
remember to set it appropriately each time I enter long notes.
