I don't know to what extent org-mode has been fully updated to work
with BBDB 3.

Info pages for BBDB 3 are still missing.  But the source code
including all user variables should be sufficiently documented.

You can define your own fields where you can put your own stuff, the
only constraint being that the field values must be plain text
strings.  More complicated lisp syntax is not allowed (yet you
could always pipe suitable text strings through something like
`read-from-string').
