Am I right in assuming, that a language modul can only fold functions and there is no way to define other "foldable" entities like for example if-then or for, while and so on constructs?

it seems to me, that other (already built-in) languages can also only fold functions (other than defining custom fold sections of course)
on the other hand html files fold hierarchical.

Am I missing something?

I really would like to be able to define other code structure in my own language modul. like "if" statements and loops. I am pretty sure I could come up with a regular expression for these code structures, but I don't know, if there are other section in the CLM plist file, which I can use for that.
