Set font permanetly

When I change the font in BBEDIT it will not stay on a MAC OS X 10.4  
Intel. The next time I start the program I have to reset the font to  
the previous settings. I checked the the preferences and found two  
settings for font, but they have nothing to do with the main font  
used in documents. Thanks for any help.
