I've reported this bug to Apple on numerous occassions. As of late, the problem
seems to have disappeared -- I've moved from a PPC to an Intel machine, and so
far I've not yet had to reboot my finder for the sake of missing files. I never
thought to try the Terminal to see if "touching" the file would make it appear.
My guess is that the problem is the NFS mount. I've never seen any other cause
of missing files in OS X...
