Get Info and set the file type to TEXT, and it should work fine. You'll probably find that your .bib files are already set that way, because I know that Quick Look doesn't recognise them by default on my machine.
ah - it wasnt this, actually, it seemed that some of them had 'double extensions' and that seems to have done the trick (removing them.) thanks.
