A couple suggestions:

  * if you have the RCDefaultApp system prefs panel, locate the "tex"
    extension mapping and set it as "<disable>" to dis-associate
    it from Excalibur.

  * delete Excalibur and then fully rebuild the Launch Services database
    by issuing the Terminal command:

    `locate lsregister` -kill -r -all local,system,user

    then logging out and back in.

Try this:

  * in the Suffix Mappings section of the Languages prefs panel, create
    a new mapping for some arbitrary extension, e.g. ".mytex", to TeX

  * modify the name of your TeX clippings folder accordingly, e.g.

    "TeX clippings.tex" -> "TeX clippings.mytex"

    [if renaming the folder doesn't break its package association,
    you'll need to apply one of the above remedies]

BBEdit should then use the renamed folder as its source for TeX clippings,
while still recognizing the mapping for ".tex" files.
