“defaults write” will write your customised default, to overwrite the
default already baked into the software. Yes, “defaults” is probably a
bad name. Perhaps “customised settings”

I think OP had it backwards. The default is YES, IOW use the system find scrap. OP wanted to change away from the default, to NO. To use a setting other than the default; it needs to be set.

From what I can see, everything is working as advertised. I think frustration led to confusion; I've been there myself, it happens. The snark level was a bit high though.
