Once the files are on OS/X, you could always rename them all using a quick 
script, so they have an informative extension (i.e., .tal). BBEDIT could 
trivially be set up to recognize this and to use your language spec. Then 
before re-uploading them, use another script to remove all the extensions. This 
could be automated in various ways.

Another approach would be to convince BBedit to examine the extended attributes 
for "BBE_SYNTAX: xxx" (or whatever) in the absence of a suffix. Then you'd 
probably need a script to add the appropriate attribute to the files.
