Setting or changing a key equivalent in BBEdit 10's Menus &
Shortcuts preference panel works the same way as in the Keyboard
Shortcuts pane of the System Preferences app:
To set or change the key equivalent for any command, locate the
desired command in the list, then click (or double-click) toward
the right-hand edge of the line which contains that command, and
type the desired key combo.
You can also assign a key shortcut to any item in the Clippings,
Scripts, or Text Filters palettes by selecting the desired item
and pressing the "Set Shortcut" button.
