BBEdit normally determines the language of files you open based on the file 
extension and applies appropriate syntax color. You can see what language it 
has determined by looking at the pop-up in the footer of the window. Or, select 
a language manually if you are working on a new file or a file with a less 
common file extension.

The colors used for syntax coloring can be set in the "Text Colors" section of 
the Preferences and that also provides a list of built-in languages. The 
mapping of file extension to language can be controlled on the "Languages" 
section of the Preferences.
