In general, the answer is "no", insofar as proportionally few end users have no idea how any given application is built, and proportionally even fewer of them care.

On the other hand, we've seen some instances of reported bugs in the OS not reproducing in 64-bit builds of BBEdit, so if you've been bumping into those, then the answer is "yes".
