All of a sudden when I press 'tab' I don't get a tab, but instead
BBEdit decides to find and highlight a particular piece of code.

That's because the highlighted section looks like (i.e. has the same form as) a BBEdit _jump placeholder_ (page 246):

  These strings have the form "<#...#>" where the content "..."
  between the two # signs is either alphanumeric text, or empty.

and you can control whether Tab should navigate to such placeholders via the leading option in the Keyboard prefs pane.
