So, two messages.
(1) Go through all the the BBEdit menus with the Option key held down. You'll
be amazed at what you'll discover.
(2) If you think, “There ought to be a way” ... pull down the Help menu, type
"save" into the search box, and marvel at the 10 (!) menu commands that are
available.
