Having worked in a Union Shop, and having worked elsewhere in the IT field (at one of the Universities I was at, all the "exempt" employees were part of a union) I have to admit, opening my mouth to HR got things done better, and fixed faster than any Union process.
Also, get everything in writing. If they ask you to work at 3am, ask them to put it in writing, as well as what you are being offered in return.
