MHonarc is pretty straightforward to use

  http://www.oac.uci.edu/indiv/ehood/mhonarc.html

In addition to generating html for new mail as it arrives, MHonarc can
also be run on an existing (unix) mailbox file.  It's also pretty
flexible in letting you tailor the output html.

Of course, the this can be done by setting up aliases on the unix
machine that pipe messages to MHonarc, then add the unix aliases to
the exchange lists in question.
