Can anybody recommend a decent way to shutdown and get a good block-level
hard drive backup, which I haven't already thought of?

I hear Clonezilla (http://clonezilla.sourceforge.net/) is good for this, but I haven't tried it yet. It may even include a GUI to make the process friendly. It is built on a CD bootable Linux distribution.

I've typically used SystemRescueCd (http://www.sysresccd.org/) for this kind of thing. Although it includes GUI tools, like QtParted, the overall process still requires command line familiarity.

Another approach to achieving the user friendliness you want might be creating a custom CD based on one of these distributions that fully automates the backup.
